Hattie’s Restaurants traces its roots to one remarkable woman, Ms. Hattie Moseley Austin Gray.
In 1938, Ms. Hattie launched Hattie’s Chicken Shack. Despite challenges, her dedication remained unwavering, and the restaurant became a community pillar at 45 Phila Street.
Ms. Hattie’s legacy extends beyond food, encompassing support for local charities and nurturing young talents. Today, we proudly continue her tradition of warmth and heartfelt hospitality.
Their Story:
In 2021, Hattie’s Restaurants was purchased by local philanthropists Ed and Lisa Mitzen, becoming part of the Business for Good™ family of companies, turning Hattie’s into a change-making kitchen. Hattie’s Restaurants is not just serving up an amazing culinary experience, we’re also serving our community. Every bite you savor at Hattie’s is a bite for GOOD – all profits go to Business for Good and are distributed to organizations and charities that fight hunger and food insecurity within our communities.

From our vibrant annual Mardi Gras fundraiser event to providing employment opportunities and implementing initiatives like “Hattie’s Homework Hour,” where students who work at Hattie’s after school can clock in early, enjoy a meal, and get paid to complete their homework, we prioritize fostering a sense of belonging and connection. Recognizing that our success is intertwined with the well-being of the neighborhoods we serve, we are dedicated to nurturing strong community bonds.
Hattie’s Restaurants are doing more than feeding stomachs, it’s feeding dreams. Business for Good’s Elaine Houston met with Devin and Anthony Myrick at Hattie’s Albany. Their life changing story is an inspiring continuation of Miss Hattie’s legacy.

At Hattie’s Restaurants, our locations embody our commitment to spreading Fine Southern Goodness. It started with our original spot on Phila Street in Saratoga Springs. Expanding to meet demand, we opened a fast-casual spot in Wilton for convenience. Our newest addition in Albany, marked by our iconic neon sign, offers the same warmth and flavor. Whether in Saratoga Springs, Wilton, or Albany, expect the same dedication to exceptional food.
Hattie’s Restaurant Expands to Historic Downtown Location:
Hattie’s Restaurant, a beloved Saratoga Springs staple since before World War II, is opening a second location in the historic former Lombardo’s Restaurant downtown. The new location at 121 Madison Ave. pays homage to its predecessor with a refashioned vertical sign, crafted by the same company that built the original. Now bearing Hattie’s name, founding year, and iconic chicken logo, the sign symbolizes the restaurant’s rich history and renowned Southern cuisine.
